Amla (gooseberry) pickle

The gooseberry season starts with the familiar green gooseberries. Use them to make a delicious gooseberry pickle.Indian gooseberry /Amla is very popular in Andhra,Gooseberry Pickle is a very healthy and Tasty. Indian Gooseberries are exceptionally rich in vitamin C.It is rich source of antioxidants, iron, vitamin A,  fiber, potassium, magnesium, calcium, etc.

Ingredients:

  1. Amla -500 grams.
  2. Oil-100 grams.
  3. Red chilies powder-1/2 cup.
  4. Mustard seeds powder -1/2 cup.
  5. Salt -1/2 cup.
  6. Lemon juice-1/2 cup.
  7. Red chilies - 4.                                       
  8. Mustard seeds-1/2 tsp.
  9. Garlic cloves- 6.






Preparation:                                      
                         
  • Wash and wipe the gooseberries and let them dry on a kitchen towel  for an one hour.
  • Heat gingelly oil in a kadai.
  • Add dried amlas one by one.
  •  Let the amlas cook on low flame for 10-12 mints Until they are slightly soft .
  • Turn of the gas, transfer the amlas to a plate.
  • Add red chilli powder,mustard seeds powder,and salt.
  • And mix all together.
  • Now add cooled amlas. 
  • Mix well,Now add lemon juice .
  • Heat oil in a pan (using oil in which I'd fried gooseberries).
  • Add mustard seeds,red chilies & garlic cloves when it turns to brown color.
  • Turn of the gas.
  • Allowed to cool completely,before adding it to the pickle.
  • Mix everything together and stir well.
  • Transfer this to an airtight container. 
  • Store in a fridge,and use after a week.
