The gooseberry season starts with the familiar green gooseberries. Use them to make a delicious gooseberry pickle.Indian gooseberry /Amla is very popular in Andhra,Gooseberry Pickle is a very healthy and Tasty. Indian Gooseberries are exceptionally rich in vitamin C.It is rich source of antioxidants, iron, vitamin A, fiber, potassium, magnesium, calcium, etc.

- Amla -500 grams.
- Oil-100 grams.
- Red chilies powder-1/2 cup.
- Mustard seeds powder -1/2 cup.
- Salt -1/2 cup.
- Lemon juice-1/2 cup.
- Red chilies - 4.
- Mustard seeds-1/2 tsp.
- Garlic cloves- 6.
- Wash and wipe the gooseberries and let them dry on a kitchen towel for an one hour.
- Heat gingelly oil in a kadai.
- Add dried amlas one by one.
- Let the amlas cook on low flame for 10-12 mints Until they are slightly soft .
- Turn of the gas, transfer the amlas to a plate.
- Add red chilli powder,mustard seeds powder,and salt.
- And mix all together.
- Now add cooled amlas.
- Mix well,Now add lemon juice .
- Heat oil in a pan (using oil in which I'd fried gooseberries).
- Add mustard seeds,red chilies & garlic cloves when it turns to brown color.
- Turn of the gas.
- Allowed to cool completely,before adding it to the pickle.
- Mix everything together and stir well.
- Transfer this to an airtight container.
- Store in a fridge,and use after a week.
