KADAI DUM CHICKEN RECIPE

INGREDIENTS:
1. Chicken 500 grams (cut into pieces)
2. Oil 2 tbsp
3. Red Chilly powder 1 tsp
4. Ginger garlic paste 1 tsp
5. Pepper powder 1/2 tsp
6 .Green chilies 4 slits
7 .Curry leaves 1 tbsp
8. Coriander leaves 2 tbsp chopped
9. Turmeric powder 1/2 tsp
10 .Coriander powder 1tsp
11. Cumin powder 1/2 tsp
12 .Lemon juice 1/2 tsp
13. Salt to taste
14. Onion sliced 1
15. Cloves 4
16. Cinnamon 2
17. Green cardamom 2
18. Kasuri Methi (fenugreek ) 2 tsp
19. Tej Patta -2

Preparation:

 Clean and wash chicken . Add salt, lemon juice, turmeric powder, red chilly powder and ginger garlic paste.Mix together. Keep covered for 5 hours in the refrigerator. Before cooking the chicken, take away from the refrigerator. Heat oil in a non stick kadai. Put cinnamon, cloves. Tej Patta  and elaichi. When they are fragrant, add onions .When onions are light brown .Add chicken. Mix well. Keep on low flame .Cover the lid of the kadai .Usually it  takes 17-20 minutes to cook chicken this way as we are not putting water. It is cooked in its own steam and the water provided by cooking After 5 minutes, open the vessel. Add coriander powder, and garam masala, cumin powder and Kasuri Methi .When chicken pieces are cooked, soft and tender. Sprinkle pepper powder. Add green chilies, and curry leaves. Simmer for a few minutes. Add coriander leaves. Serve hot with rice/Biryani/paratha / pulka.
