CHOCOLATE MUFFINS


A very easy and quick recipe for chocolate muffins, these chocolate muffins is very yummy, tasty, and moist. Learn how to make chocolate muffins.







INGREDIENTS :
  1. Caster sugar-120 grams.
  2. Dark chocolate -120 grams.
  3. Cocoa -3 tsp.
  4. Sugar [dark] -100 grams.
  5. Corn flour-50 grams.
  6. Baking powder -2 tsp.
  7. Sun flower oil-80 ml.
  8. Plain flour-120 grams.
  9. Vanilla extracts -2 tablespoon.
  10. Unsalted butter-75 grams.
  11. Eggs – 2.
  12. Dark chocolate-120 grams [small broken].
  13. Cold water-200 ml.
  
  1. Put the corn flour, cocoa, brown sugar and water into a saucepan mix well.
  2. Over a medium heat until boiling, very thick and smooth.
  3. Remove from the heat. Keep aside to cool.
  4. Beat in the butter and chocolate until melted and absorbed,
  5. Then add the oil, vanilla extract and one of the eggs, and beat again until combined.
  6. Add the remaining egg and the caster sugar, and beat again until smooth and thick.
  7. Measure the flour and baking powder into a bowl, stir together, then sift directly onto the custard and beat through until combined.
  8. Spoon muffin batter into the muffin tin using two spoons or an ice cream scoop.
  9. Only fill each cup ½ to 2/3 full. Put the muffin cases sitting in muffin tray.
  10. Preheat the oven to 180 c and bake muffins for 20 minutes. Once muffins are done leave them to stand for 5 minutes.

NOTE : Muffins should be baked in the center of a preheated oven and are done when a tooth pick inserted in the center comes out clean and the edges start to come away from the sides of the pan center Usually 20-25 minutes at a 350 – 400 degree F (175 – 205 c in the oven). Make sure you do not over bake muffins or they will be broken.
